15 Minute Dinners: Braised Lamb Chop Bowls

Can lamb be made in less than 20 minutes? Can a delicious weeknight dinner consist of such a great cut of meat and with other leftovers in the fridge. This recipe combines two of our favorite recipe concepts into one. We love meals that are both a cupboard clean out and are made in 15 minutes. Plus it’s served in the bowl? Yes, this dinner does all three and can be yours tonight.

15 Minute Dinners: Braised Lamb Chop Bowls

Servings: 4

Ingredients:

  • 8 lamb chops, 2 per person
  • 1 C instant brown rice (We use the kind from Trader Joe’s that cooks in 15 minutes.)
  • 4 tomatoes
  • Jar of marinated artichoke hearts
  • 3 sprigs of fresh rosemary, finely chopped
  • 3 garlic cloves, minced
  • 3 T extra virgin olive oil

Toppings for bowls:

  • Hummus
  • Sun dried tomatoes
  • Feta Cheese
  • Olives
  • Cucumbers
  • Chopped romaine lettuce
  • Fresh mint

Directions:

Preheat oven to 350 degrees F.

Begin by placing water in a medium sauce pan to cook rice. Bring water to boil. Add rice and cook to package instructions. Meanwhile, place meat on cutting board. Rub with olive oil. Coat with fresh ground salt and pepper. Add a coating of rosemary and garlic. In a cast iron skillet on medium high heat, add olive oil and bring to temperature. Add lamb chops. Sear until brown on each side. Place tomatoes (whole with tops removed) and artichoke hearts in the skillet. Add to the oven and finish for 5 minutes (variable temperature based on how done you like your lamb).

To assemble bowls: Place rice in bowl. Add lamb chops, blistered tomato, and artichoke hearts. Top with feta and your favorite toppings. Season with salt and pepper and an additional drizzle of a favorite olive oil. Enjoy dinner tonight!
