Blood Orange Yogurt Bowls with Granola and Honey

Every morning, I get up in a flash. While I would love to say that I’ve nailed a morning routine complete with cups of warm lemon water and yoga, I can’t say that I’ve gotten there. Instead, I wake up, with a favorite song on my phone, sun streaming in, and as soon as my feet are placed on the ground I take off. (Usually straight to my coffee.) In my haste, I can quickly forget eating breakfast (Anyone else?). Because of this, I find that meal prep and grab and go options are all too essential for full days where stopping for lunch isn’t an option.

This recipe is perfect for your meal prep and laundry days. Yielding a few mason jars of granola, it provides a pantry staple that is nutritious and can be mixed up with a variety of toppings and reimagined over and over again. For the spring, I love playing with blood oranges. With a stunning color and delicious flavor, they add another element to a standard breakfast.

Blood Orange Yogurt Bowls with Granola and Honey

Servings: 8-10, or one large mason jar of granola

For the granola:

  • 4 C oats
  • 1 C wheat germ
  • 1/2 C flaxseed meal
  • 1 C almond slices
  • 1 C dried cranberries
  • 1 t cinnamon
  • 1 1/2 t salt

Whisk and pour over:

  • 1/3 C coconut oil, melted
  • 1/4 C honey
  • 1 t vanilla
  • 1/2 C water

Toppings:

  • Blood orange segments
  • Raw organic honey
  • Organic greek plain yogurt

Directions:

Preheat oven to 300 degrees.

Mix together dry ingredients in a medium sized bowl. Add wet ingredients and stir until granola mixture is clump-free and evenly moistened. Spread mixture onto a greased, large baking sheet. Bake for 1 hour, stirring every 20 minutes. Remove from oven and cool. Store in airtight container.

To assemble: Place container of yogurt in bowl. Add segments of blood orange. Top with granola and honey. Enjoy!
