5 Soups and Stews for April Showers

Whether I like it or not, it seems that the rainy and quintessential Pacific Northwest weather is here to stay. For the days where you just want to stay in, these 5 Soups and Stews are perfect for staying full, warm, and healthy. (Because while I love hearty soups, I opt to steer clear of ones loaded with cream and cheeses, as summer weather is quickly approaching.)

If you have a bag of carrots and can of tomatoes, you can quickly make this soup. Whole30 approved it’s a nutrient rich favorite. With notes of cumin, coriander, and tumeric, there’s a surprise of spice that’s somewhat unexpected, while adding a layer of warmth to the dish.

Made with crisp lentils that have been par cooked and pan seared, this soup is a beautiful pairing of sweet and savory. From the carmelized onion in the lentil to the sweetness of the potato, this soup invites new discovery when it comes to topping a common bowl.

One of my favorite meats to play with in the springtime is lamb. After roasting a leg of lamb, I love to use up the leftover bits of lamb in this stew. Filled with tomato, potato, and carrot, it is filling and a great dish for a rainy night.
