Apple Tarts with Thyme Brown Butter

With deliberate simplicity and highlighting classic fall flavors, this dish is a newfound favorite. Unlike standard desserts, it’s essence is simple. Minimal ingredients, it’s simple enough to be made on a weeknight. (I use store bought puff pastry and have absolutely no shame.)

Apple Tarts with Thyme Brown Butter

Ingredients:
– 2 Gala Apples
– 1 roll puff pastry
– 5 sprigs of fresh thyme, + 1 per tart
– 2 T unsalted butter
– 4 t organic sugar
– flour for dusting
– sea salt flakes to finish

Directions.
Begin by preheating your oven to 400 degrees Fahrenheit.

In a saucepan over medium high heat, brown butter and reduce until it is a golden color. Add sprigs of thyme. Remove from heat and place to the side. Flour surface. Roll out sheet of puff pastry. Using a sharp knife cut into 4 squares. Transfer puff pastry to 4 mini cast iron pans or pinch corners and place on parchment lined baking sheet. Thinly slice apples into half rounds. Place on top of pastry. Brush with infused brown butter. Add sprig of thyme on top. Sprinkle on each pastry 1 t of sugar. Place in oven and bake 20-25 minutes or until puff pastry is golden brown. When removing from oven, add a few sea salt flakes.

Serve with homemade caramel sauce or scoop of ice cream on top. Enjoy!
