Greek Chicken Bowls (Perfect for Meal Prep)

This recipe is another one that checks off all the boxes. Made in 15 minutes, great for meal prep, and cleaning out the fridge. It’s practical and delicious. We promise you, it’s one you’ll want to put in your weekly rotation. With baby kale, Jerusalem salad, pan seared chicken, and the most delicious tzatziki sauce, it’s full of robust flavor while remaining clean.

Greek Chicken Bowls (for Meal Prep)

Servings: 4

Ingredients:

  • 2 Chicken Breasts
  • 4 T chopped fresh mint
  • 5 T extra virgin olive oil, split between Jerusalem salad and chicken breast
  • 1/2 t garlic powdered
  • 1 package baby kale
  • 4 oz feta cheese
  • 3 tomatoes, deseeded and diced
  • 1 Cucumber, peeled and diced
  • Juice of two lemons, 1 on chicken, 1 on salad
  • salt and pepper, to taste
  • kalamata olives
  • tzatziki sauce, our homemade sauce or store bought
  • hummus, our homemade hummus or store bought

Directions:

In a skillet, bring olive oil to medium high. Liberally season with garlic powder, fresh ground salt and pepper. Brown each side of chicken breast. Deglaze the pan with lemon juice. Reduce heat and cover with lead. Cook through. Meanwhile in a small bowl. Prep tomatoes and cucumber for Jerusalem salad. Dice and place into bowl. Add the juice of lemon, olive oil, salt pepper, and finely chopped mint. Begin assembling your bowls. Add kale, Jerusalem salad, tzatziki, scoop of hummus, feta, and a few olives. Top with slices of chicken. Store in the fridge for lunches or enjoy for dinner!
