Homemade Granola

One of the goals I had for the month of January was to cut out all processed foods. In the process (pun intended), I’ve had to change my approach to cooking and recipes. This recipe for homemade granola is filled with good things and the perfect fit. Placed in a bowl of organic vanilla yogurt and drizzled with honey, or as a simple bowl of cereal with almond milk, you have a delicious, well-balanced breakfast one bowl away.

Ingredients:

  • 4 C oats
  • 1 C wheat germ
  • 1/2 C flaxseed meal
  • 1 C almond slices
  • 1 C dried cranberries
  • 1 t cinnamon
  • 1 1/2 t salt

Whisk and pour over:

  • 1/3 C coconut oil, melted
  • 1/4 C honey
  • 1 t vanilla
  • 1/2 C water

Directions:

Preheat oven to 300 degrees.

Mix together dry ingredients in a medium sized bowl. Add wet ingredients and stir until granola mixture is clump-free and evenly moistened. Spread mixture onto a greased, large baking sheet. Bake for 1 hour, stirring every 20 minutes. Remove from oven and cool. Store in airtight container.

Enjoy the taste and crunch of this delicious clean eating granola. It could be breakfast tomorrow!
