Lamb 3 Ways: Gyro Sandwich

Today we’re continuing a series where we cook one protein three ways. Last time we started with a roasted leg of lamb and today we’re continuing with a lamb gyro sandwich. With crisp toppings and fresh pita it is a great wrapped up for a picnic, lunch, or quick supper. One of my favorite sandwiches, you’ll find this to be a staple as well.

Gyro Sandwich

4 servings

Ingredients:

1-2 chopped and shaved roasted lamb (recipe here)
Fresh whole wheat pita (recipe here)
1 tomato, cored and diced
1 head of romaine lettuce, chopped
4 oz feta cheese
1 C plain, nonfat Greek yogurt
1/2 C peeled and deseeded cucumbers, finely chopped
1 clove of fresh garlic, minced
2 T fresh parsley, finely chopped
2 T fresh mint, finely chopped
Juice of 1/2 of a lemon
Salt and pepper to taste

Directions: 
Bring your lamb to temperature.To make tzatziki sauce, combine yogurt, cucumbers, garlic, parsley, lemon, and mint in a small bowl. Mix thoroughly. Salt and pepper to taste. Set to the side.Prepare all of your vegetable toppings. To assemble sandwiches, add meat and then chopped veggies and feta. Top with tzatziki sauce. I like to wrap finished sandwiches in parchment paper, then aluminum foil to make eating and serving for large groups easier. Grab your gyro and enjoy!
