Ingredients:

yields: 1 single serving

  • Medium ground coffee
  • Filtered water
  • Sparkling mineral water
  • Sugar
  • Vanilla extract

Directions:

For the cold brew concentrate: The night beforehand, place 1/3 C of medium ground coffee and 1 1/2 of filtered water in a french press. Place in fridge for at least eight hours. The next morning remove from the fridge and plunge.

For vanilla simple syrup: Bring 1 C of filtered water and 1 C of sugar (any sugar will work) to boil. Bring to boil and keep on heat until sugar is dissolved. Add 1 T of vanilla extract. Remove from heat and let cool. Store in sealed glass container at room temperature and use for up to two weeks.

To assemble the soda: Partially fill a highball glass with ice. Add cold brew to the glass (around 3/4 full). Add 2 teaspoons of simple syrup. Top with sparkling mineral water. Use a spoon to stir ingredients. Add a straw and enjoy!
