This recipe is a easy side dish to prepare on weeknights or as a simple side for a casual dinner party. With notes of lemon, lemon zest, and fresh herbs, this dish is light and seasonal, elevating it past the basic flavors of cauliflower.

1 head of cauliflower, riced (you can also purchase it already riced at Trader Joe’s)
2 T fresh parsley
2 T fresh rosemary
2 T fresh thyme
2 cloves fresh garlic, grated
2 T extra virgin olive oil
Juice and zest of one lemon
salt and pepper, to taste
In a deep skillet, bring olive oil to medium high heat. Add minced garlic and cook for 30 seconds. Add riced cauliflower and pan sear for 5 minutes. Add fresh herbs, lemon, and zest. Cook for an additional 2 minutes or until cauliflower rice is cooked through. Season with salt and pepper.
