Introducing 15 Minute Dinners: Shrimp Tacos

We’ve all been there. The days where you’re absolutely exhausted and knowing that the night will be equally as long. There’s a constant temptation. To pull over and sit in the drive thru, knowing that the nagging hunger can’t quit. But what if there was a better option? I’ve been right there with you and have given into that temptation more often than I would like to admit. (Yes I’ve totally survived on salads from the deli section and the drive through over the past school year. It’s something I’m super thankful to curb.) Meet the 15 Minute Dinner. You can make this recipe faster than time you sit in drive thru at In-N-Out. Sounds good? We thought so.

15 Minute Dinners: Shrimp Tacos

Ingredients:

  • 1 8 oz container non-fat plain organic greek yogurt
  • 1/4 C salsa
  • Organic mixed cabbage mix (ours is a green, purple, and carrot blend from Trader Joe’s)
  • 1 Package of Shrimp (raw, deveined, frozen or fresh is great)
  • 1 T taco seasoning
  • 1 lime, juice plus zest
  • 1/2 C raw cheddar cheese
  • Whole wheat tortillas (bought or can be premade with our recipe)
  • Cilantro (optional)

Directions

In a cast iron skillet over medium high heat, add olive oil. Bring to temperature. Add shrimp. Sprinkle taco seasoning on top. As the shrimp is cooking, combine a bit of salsa and greek yogurt in a bowl. Add the zest of the lime and finely chopped cilantro. Season with salt and cayenne pepper. Flip shrimp to cook the opposite side. Squeeze the juice of a lime on top. Warm tortillas. Place tortillas on top of plate. Fill with 3 shrimp each. Top with grated cheddar cheese. Add cabbage mix and top with sauce. Finish with cilantro and a lime wedge. Enjoy!
