Mediterranean Quinoa Bowls

When it comes to meals during the workweek, I find that meal prepping is vital for making healthy choices when evenings are full and the days are long. This has been one of my favorite go-to meals for a while and it keeps things light and fresh while providing plenty of protein and energy to stay moving.

Mediterranean Quinoa Bowls

Individual serving

Ingredients:

  • 1/3 C quinoa
  • 1 C water

Toppings:

    • Dollop of sun dried tomato hummus (find the recipe here)
    • Feta cheese
    • Kalamata olives
    • Sun dried tomatoes
    • Fresh mint
    • Roasted red pepper
    • Diced tomato
    • Diced cucumber

Directions:

Bring water to boil. Add quinoa and cook for 10 minutes or until all water has evaporated. Remove from heat and cover for 5 minutes. Remove lid and fluff with a fork. Place in a large shallow bowl. Add toppings in a circular fashion. I love to play with colors and textures in food, so I prefer to pair like ingredients together for serving. Looking for a bit more protein? Add some lentil falafel, hummus, or slices of lemon herbed chicken. Drizzle with extra virgin olive oil and fresh ground salt and pepper. Top with fresh mint and enjoy!
