One Sheet Pan Chicken Fajitas

If you’re anything like me, when it comes to making weeknight meals, getting something made can be a struggle. With many evenings booked out, it’s challenging. Maybe you’re right there with me? This meal is perfect for the days where you just can’t even. Made in less than 30 minutes, it will feed a crowd or one (and leftovers for the week). Our favorite part? Made on one sheet pan, cleanup is a breeze.

One Sheet Pan Chicken Fajitas

Servings: 4

Ingredients:

  • 1-1.5 lb chicken thighs, cut into strips
  • 1 T organic extra virgin olive oil
  • Juice of one lime
  • 2 organic red bell peppers
  • 1/2 red onion, sliced into thin rounds
  • 2 T chili powder
  • 1 tsp garlic powder
  • 1/8 tsp cayenne pepper
  • 1/2 tsp ground pepper
  • 1 tsp salt
  • 1 tsp cumin
  • 1/2 tsp coriander
  • 1 tsp smoked paprika

Directions:

Preheat oven to 400 degrees F. Place sheet pan in oven as it is preheating. In a large mixing bowl add olive oil, chopped pepper, and onion. Toss in olive oil. Place on sheet pan. Cook in oven for 8 minutes. Leave remaining olive oil in the bottom of bowl. Add seasonings. Combine with a fork. Chop chicken. Toss chicken until thoroughly coated. Place on sheet pan. Cook for 15 minutes or until chicken is cooked through. Add juice of fresh lime when pulled from the oven.

Pair with whole wheat tortillas and your favorite toppings. For these we kept it simple with some grated raw cheddar and homemade salsa.
