Boasting the flavors that are reminiscent of the last days of summer, it’s a salad that is both simple and wildly elegant. Not to mention it’s ridiculously good. There’s a reason why these ingredients are on Pinterest repeat- they’re everything when paired together. By placing a round of burrata in the middle, it’s a hidden gem and pleasant surprise as the moist mozzarella milk burst in your mouth with the first bite. Topped with a homemade basil vinaigrette, this salad is now a summertime favorite.

Peach, Prosciutto, and Burrata Salad
4-6 servings
Ingredients:
- 1 package/bunch arugula
- Burrata
- 3-4 slices prosciutto, torn into bite-sized pieces
- 2 ripe peaches, cut into slices
For the dressing:
- 1/2 C fresh basil
- 2 T apple cider vinegar
- 2 T raw honey
- 1/4 C extra virgin olive oil
- salt and pepper, to taste
Directions:
Thoroughly wash the arugula and place in a clean tea towel to dry completely. Set to the side. Slice peaches in rounds and tear prosciutto into bite sized pieces. In a small food processor or blender, place torn basil, apple cider vinegar, and raw honey. Drizzle in olive oil to emulsify into a delicious vinegar. Taste for sweetness. Add salt and pepper to taste. To assemble the salad place arugula in a bowl. Add prosciutto and peaches to the top. Finish with a pulled piece of burrata. Drizzle vinaigrette on top. Finish with a sprig of basil. Enjoy this amazing salad as we say farewell to the last days of summer!
