I’ve waited until the official start of fall for baking with pumpkin. Now I just can’t stop. Here’s the thing about this cobbler you all- it’s ridiculously simple and is made with items you most likely already have in your pantry. Topped with a scoop of our favorite local Haverton Hill Creamery Vanilla Bean Ice Cream, it’s perfect for any fall gathering or a sweet treat at the end of the day. Pumpkin Pecan Cobbler with Caramel Sauce
- 2 cups all purpose flour
- 2 teaspoons baking powder
- ½ t salt
- ⅔ C organic sugar
- 1 t cinnamon
- ½ t ginger
- ¼ t nutmeg
- ¼ t ground cloves
- ½ C pumpkin puree
- ¼ C milk (I used almond milk I had on hand)
- ¼ C melted butter
- 2 t organic vanilla extract
- ½ C organic sugar
- ½ C brown sugar
- ¼ t ground cinnamon
- ⅓ C whole pecans, toasted in a brown butter
- ½ C very hot water
- Haverton Hill Creamery Vanilla Bean Ice Cream
Preheat the oven to 350 degrees F. Grease a pie pan and set to the side.
In a bowl, whisk together dry ingredients. In a small bowl, stir together pumpkin, milk, butter, and vanilla. Add the wet ingredients to the dry and thoroughly combine. Place batter into pan and smooth this layer.
In a small pan place an addition 2 T of unsalted butter. Brown butter and add pecans until coated. In a small bowl. Add sugars and cinnamon. Sprinkle on top of the batter layer. Place pecans on top. Bring water to temperature and pour on top. Do not stir. Place pie plate on top of cookie sheet. Place in oven and bake for 40 minutes or until center is cooked through. Top with delicious Haverton Hill Creamery sheep’s milk vanilla bean ice cream.
