RASPBERRY MOJITO POPSICLES

In Redding, summer is in full swing. This week we’re back into the land of triple degree temperatures and survival is the name of the game. Most of us have come to hibernating in the AC or make sure we’re in water, as well the heat is super real. Inspired by the fresh berry crop and some picking outings we’re hoping to do, we thought these grown-up popsicles would be perfect for beating the heat and staying cool. These popsicles have a festive pop of red and are the perfect poolside treat for the fourth of July weekend.

The tools:
We’ve used a few popsicle makers in our day and this one is our favorite. It is classic, inexpensive, and releases from the mold incredibly well. Expect a lot more popsicle recipes this summer because we might be hooked!

Raspberry Mojito Popsicles

yield: 10 popsicles

Ingredients:

  • ½ cup sugar
  • ½ cup water
  • 35 mint leaves, plus an additonal mint leaf for each popsicle
  • ¾ cup lime juice
  • 6 tablespoons light rum
  • 6 oz raspberries
  • 1/2 C club soda

Directions:

In a saucepan over medium high heat, bring water to just below a boil. Add sugar and reduce temperature. Stir until sugar is dissolved. Remove from heat. Add mint leaves and steep in the simple syrup for 10 minutes. Remove leaves and discard. Pour simple syrup into bowl and squeeze in the fresh lime juice and rum. Stir until ingredients are combined. Pour into popsicle mold until around 1/2 full. Add berries and a fresh mint leaf to each mold. Then add the remaining mixture until each mold is 1/4 full. Top with club soda. Freeze for 1 hour, then add popsicle sticks. Freeze overnight so the alcohol in the mold can become solid regardless of the temperature. Enjoy these grownup popsicles by the pool this weekend. (Tip: Have littles in your crowd? Leave out the rum and make some raspberry mint pops for them! It’s a cleaner alternative to the store bought ones and they can be included in the fun.)
