Red, White, and Blue Salad

In honor of the upcoming holiday, we opted to share a healthy side. This salad is amazing and one of our favorite creations to date. With nuances of flavor it texture, the profiles are robust and far from a standard barbeque side. There’s the subtle sweetness of berries, the bite of red onion, crunch of raw almonds, and the punch of roquefort blue cheese. It says festive, looks stunning, and isn’t overdone.

Red, White, and Blue Salad

Ingredients:

For the salad:

  • 1 package organic baby spinach
  • 3 C shredded romaine lettuce
  • 1/4 C crumbled roquefort cheese
  • 1/4 C thinly sliced rounds of red onion
  • 1/4 C raw almonds, chopped
  • 1/2 C strawberries, sliced
  • 1/2 C raspberries
  • 1/2 C blackberries

For the dressing:

  • 4 T organic extra virgin olive oil
  • 1/2 T balsamic vinegar
  • 1 t raw honey

Directions:

Clean lettuce, spinach,  and berries. Once lettuce is rinsed thoroughly dry off the leaves with paper towels or a salad spinner. Place lettuce leaves and spinach in a large bowl. Begin to add berries to the top and layer on toppings. Finish with cheese as final toppings.

In a small mason jar, combine extra virgin olive oil, balsamic vinegar, and honey. Place lid on and shake vigorously. Pour on top of salad and toss to combine.
